Preheat the oven at 190 ° C. Cut the pears in half towards the length. With a small knife, remove the core and seeds of each pear, leaving a round hole to put the filling. Cut a small slice of the outer sides of each half of pear so that they stand still in the baking dish without swinging. Drizzle the pears with a little lemon juice to prevent them from darkening. Arrange them, with the core side up, in a baking sheet large enough to fit the pears. Mix the crumbled cheese, plum and walnuts in a small bowl. Divide the mixture between the pears, stuffing the halves. In the same small bowl, mix wine and brown sugar, stirring to dissolve sugar. Pour the mixture over and around the pears. Bake the pears for 30 minutes, or even tender.
